A cold side dish prepared ahead will prevent unnecessary pressure on the night.
Cut the top and bottom off each orange and sit them on a board. Following the curve of the orange, cut away the peel and pith using a sharp knife. Hold the orange over a large bowl to catch the juices and cut out the individual segments. Keep the segments to one side.
Squeeze any juice out of the remaining part of the oranges into the bowl and add the vegetables and olive oil. Season, t
