As a child, I would always make flapjacks for Bonfire Night and I’ve enjoyed making different versions ever since. The fruits can be swapped and changed to suit your own tastes. Apricots, peaches, apples, figs, dates, prunes, sultanas and raisins are all good choices.
Grease and line the base and sides of an 18cm square tin or use one with similar dimensions.
Place the butter, sugar, syrup and orange zest in a large saucepan over a medium heat and stir until the butter has mel
