Based on the Spanish tradition of having sherry as an apéritif, this longer, refreshing version is a great way to start off your al fresco meal, along with the Smoked Paprika and Celery Salted Almonds and perhaps some juicy olives.

Ingredients

  • 750 ml bottle of chilled dry sherry
  • about 2.25 litres soda water

Method

Divide the sherry into eight tall glasses and top up with the soda (aim for about a third sherry and two-thirds soda). Add plenty of ice and a few slices of lemon.
