A very Moorish nibble to serve with an aperitivo.

Ingredients

  • 2 egg whites
  • 500 g blanched almonds
  • 2 teaspoons Spani

Method

Preheat the oven to 200°C/fan 180°C/gas 6.

Whisk the egg white until it is light and frothy. Stir in the almonds, paprika, celery salt and sea salt.

Tip the almonds on to a lightly oiled non-stick baking tray and spread into a single layer.
