I love this combination of flavours and these are what can only be described as gorgeous.

Ingredients

  • 3 tablespoons olive oil, plus extra for brushing
  • red peppers, thinly sliced
  • 1 large onion

Method

Preheat the oven to 220°C/fan 200°C/gas 8.

Heat the olive oil in a frying pan and then gently fry the red pepper, onion, garlic and rosemary for 20 to 25 minutes until the onion and red pepper are wonderfully soft and juicy.
