It wouldn’t be a proper buffet without a piece of ham on the table.

Ingredients

  • approx. 3 kg piece of gammon stock ingredients:
  • 1 small onion, 1

Method

Place the gammon in a large saucepan and cover with cold water. Bring to the boil and then drain. Rinse well, return to the pan and refill with cold water.

Peel the onion, carrot and potato and cut in half along with the celery. Add to the pan with the garlic, bay leaf and peppercorns. Cover with a lid and bring to the boil. Reduce the heat so the water is simmering, cover loosely with
