This is a modern and very healthy alternative to a rice salad or tabbouleh. If you want to make this into a more substantial recipe, crumbled feta cheese is really nice, especially if you have a few vegetarians at your party.
Bring the stock to the boil in a large saucepan. Stir in the quinoa, return to the boil and simmer, uncovered, for about 10 to 12 minutes. It may need a little longer, but you will know it is cooked when rings around the centre of the grains begin to detach themselves.
