This is a modern and very healthy alternative to a rice salad or tabbouleh. If you want to make this into a more substantial recipe, crumbled feta cheese is really nice, especially if you have a few vegetarians at your party.

Ingredients

  • approximately 2 litres chicken stock
  • 500 g quinoa
  • 1 fairly

Method

Bring the stock to the boil in a large saucepan. Stir in the quinoa, return to the boil and simmer, uncovered, for about 10 to 12 minutes. It may need a little longer, but you will know it is cooked when rings around the centre of the grains begin to detach themselves.

Drain the quinoa really well, shaking in the sieve to separate all the grains, and then tip into a large mixing bowl an
