This is fine to make the day before it is needed. In fact, the flavours are even better the next day.

Ingredients

  • 4 skinless, boneless chicken breasts
  • grated zest and juice of 1 lemon

Method

Start off by placing the chicken in a dish and adding the lemon zest and juice, garlic, 1 tablespoon of the olive oil and seasoning with salt and pepper. Leave to marinate for an hour or so.

Meanwhile, cook the pasta until al dente. Drain, refresh under cold water and toss in 1 tablespoon of the olive oil to prevent it from sticking. Keep to one side.
