My mum would make made this salad a lot when I was growing up, and it was always a winner. For the dressing she used stem ginger in syrup, but it is very sweet, especially for a healthy cookbook, so I played around using fresh root ginger. Ginger is known for its anti-inflammatory and anti-nausea properties. The fresh ginger dressing hits the right spot – it’s a little firey, a touch sweet, tangy and perfectly peppery.
