I can’t get enough of this salad – it’s jam-packed with superfoods and makes me feel so healthy when I’ve eaten it. The wasabi and soy dressing really adds a punch and beautifully complements the rich, oily mackerel. It is well worth making extra dressing to use on pretty much any salad you like. It’ll keep for weeks in a jar in the refrigerator.
