Such simplicity, yet such amazing flavours. The peppery salad cress and radishes really make this dish. If you want to try a different grain, pearled spelt, farro or bulgur wheat would be delicious, but for me the nuttiness and bite from pearl barley is pretty special. I’ll often serve this as a first course for four before a light main course, though it is certainly substantial enough to serve two as a main course.
