Pesto pasta is a really quick and easy midweek meal that many households will no doubt turn to on a regular basis. But to make the pesto a little more nutritious, I use kale, a genuine superfood, in place of some of the basil. Its flavour and colour are amazing, and it can be used in all the same ways as traditional pesto. You could also try replacing the kale with watercress, rocket/arugula or baby spinach leaves, if you’ve a bag in the refrigerator that you need to use up. They won’t need
