Pesto pasta is a really quick and easy midweek meal that many households will no doubt turn to on a regular basis. But to make the pesto a little more nutritious, I use kale, a genuine superfood, in place of some of the basil. Its flavour and colour are amazing, and it can be used in all the same ways as traditional pesto.
