This is another one of my go to dishes for a cold day. It ticks all the boxes for comfort food – spicy, hearty, rich and satisfying, yet it’s still really healthy. It’s a full-flavoured one-pot wonder with a refreshing bite (due to the juicy mango) and a crunchy coconut finish.

Ingredients
