I don’t know where to begin when describing this dish! It is such a tasty stew, overflowing with beautiful flavours and goodness. I often make this ahead of time and then gently heat through when I need it, adding the kale for the last 10 minutes of cooking to keep it as fresh and flavoursome as possible. I then serve it with the lemon zest, mint and toasted pine nuts scattered over the top for a final burst of flavour and colour. It’s lovely served with bulgur wheat or couscous – I’ve also
