Although traditionally koftas are served with flatbreads or couscous, I’ve opted to serve mine with a nutrient-rich carrot mash flavoured with tangy lemon juice, parsley and lots of tahini (sesame seed paste). Sesame seeds are rich in many essential minerals including calcium, zinc and iron. Although you can easily buy tahini in supermarkets, I do thoroughly recommend having a go at making your own – it’s very simple and the flavour is amazing.
