  • About

If you’re concerned this may be a little on the light side as there are no added carbohydrates, you can add a portion of cooked noodles or rice to the base of the bowls before spooning over the broth. It’s a doddle to make and a lovely alternative midweek meal or even a dinner party option.

Ingredients

  • 4 thick white fish fillets, such as cod, haddock, pollock or coley, about 150g/5½oz each, skin on
  • 1 tbsp light soy sauce</

Method

Put the fish in a flat non-reactive dish. Mix together all of the remaining fish marinade ingredients and pour over the fish. Leave to marinate for 30–60 minutes, depending on the time you have available, turning halfway through.

Put the stock and rice wine in a saucepan or base of a steamer over a high heat and bring to the boil. Add the asparagus, courgettes/zucchini, carrots and baby
