Though the ingredients list looks long – this is in fact another great dish to prepare when you want something simple, quick and healthy. Steaming everything in the parcels retains all the flavours and more nutrients than many methods of cooking – win win.

Ingredients

  • 200 g/7 oz flat rice noodles
  • 250 g/9

Method

Cook the rice noodles according to the packet instructions, but if you can, try to leave them slightly al dente. Drain and refresh under cold running water. Leave to one side.

Preheat the oven to 220°C/425°F/gas 7. Take a piece of baking parchment or foil about 30 x 60cm/12 x 2
