This is such a refreshing salad that has the added benefit of being fairly quick to prepare. The courgettes/zucchini are kept raw and simply grated, which reveals their soft texture and sweet and slightly nutty flavour. Simple grilled/broiled salmon (or other fish) goes well with the salad but I like to add a kick of spice by spreading over a little harissa paste just before cooking, which complements the sweetness of the cranberries in the salad.
