Wheat berries are a versatile whole grain with a sweet, nutty taste and a delightful chewy texture, which are packed with fibre, antioxidants and disease-fighting compounds called lignans. They are becoming more widely available in supermarkets – if you can’t locate them, great alternatives are farro, pearl barley, pearled spelt or bulgur wheat, which is in fact precooked, dried and cracked wheat berries.
