There is a very Middle Eastern feel to this dish, which is aromatic, fragrant and spicy. It is an ideal recipe to make when you need something on the table quickly and, providing you have a fairly well-stocked larder, you shouldn’t need to do much shopping either. Defrosted frozen prawns/shrimp work well, as do any other greens instead of cavolo nero (also known as black cabbage or Tuscan Kale).
