Utterly delicious – I can’t recommend this dish highly enough. It’s bursting with colour, flavour and goodness.

Ingredients

  • 2 tbsp olive oil
  • 2 onions, finely sliced
  • 4 celery stalks, finely sliced

Method

Preheat the oven to 200°C/400°F/gas 6.

To make the pilaf, heat half the olive oil in a saucepan and add the onions. Cook over a gentle heat for about 10 minutes
