The combination of feta cheese, peas and mint has been a favourite of mine for a long time now, although I’d usually mix them with pasta. Quinoa makes a great substitute when I am in the mood for something a bit lighter and lower on the carbs. It’s well worth making enough of this salad so you have plenty of leftovers for the next day as it makes a great packed lunch to take to work, or a side dish to serve with some roast chicken or grilled fish.
