This is a really light dessert to end a meal and a very good way to use those pears that are under-ripe. Poaching them in a powerful antioxidant green tea, mandarin and ginger infusion will soften them up nicely and give them a great flavour. Serve alone or with a dollop of Greek yogurt for a creamier finish.

Ingredients

  • 4 green tea bags
  • 125 g/ oz/scant cup

Method

Put the tea bags in a jug with 1l/35fl oz/4 cups boiling water. Leave to brew for 5 minutes before discarding the tea bags. Pour the tea into a saucepan wide enough to hold the pears in a single layer.

Stir the sugar, ginger and mandarin zest into the tea. Put over a medium heat and stir until the sugar has dissolved. Add the pears in a single layer. Bring the liquid to a simmer and cov
