Usually fruit fools have the reputation of being very indulgent and naughty as they are made with full-fat cream and often custard, too. This is a very healthy version that can fool anyone (sorry I couldn’t resist!).
Put the cashews in a bowl and cover with water. Leave to soak for about 2 hours to soften.
Meanwhile, put the rhubarb, ginger and orange juice and zest in a saucepan over a medium-low heat. Cover with a lid and cook for about 10 minutes until the rhubarb has cooked down to a pulp, stirring occasionally. Remove from the heat and leave to cool completely.
When cold, blitz the rhub
