OK, so this isn’t a proper cheesecake because it doesn’t actually contain any cream cheese at all. That said, it looks and tastes like a baked cheesecake and is fantastically healthy at the same time. The base is a clever mix of oatmeal, dates (to naturally sweeten), coconut oil and pecan nuts, so no overly sweet, shop-bought biscuits here. The creamy filling is made using silken tofu and eggs, and is classically flavoured using vanilla seeds and some lemon for added zest. This is a high-pr
