Traditionally, crumble toppings are made by rubbing butter into flour and sugar with a few optional extras added along the way for flavour and crunch. To give this a healthier twist, I use coconut oil to mix into the oats mixture and sweeten it with honey. The addition of flaked/sliced almonds and pumpkin seeds provides added loveliness and the flavoursome orange and cinnamon give the topping that little extra something – it’s delicious.
