These are a perfect pick-me-up treat when you crave something sweet without the ingredient of guilt. They’re wonderfully quick and easy to make – though do be warned, they are very moreish. I like to use spelt flour in these cookies as it has a slightly nuttier flavour than wheat flour, it’s higher in protein, lower in gluten and a great source of slow-release energy. If you prefer, standard wheat flour can be used instead of the spelt flour.
