This soup is a good winter dish. I personally like to eat it any time of the year, but on a cold winter evening a large bowl of this soup served with plenty of crusty bread in front of the fire (are you getting hungry?) is absolutely delicious. I also like to add some smoked bacon to this soup to lift the flavour and almost make it a main course dish. It can, of course, be a vegetarian soup by simply omitting the bacon and replacing the chicken stock with vegetable stock.
