These croquettes can be made with other fish: salmon, cod, prawns or shrimps. In this mackerel recipe, I’ve added one small fillet of smoked mackerel. This is not essential, but it does enhance the whole flavour of the fish without being overpowering.

Ingredients

  • 4 mackerel fillets, skinned
  • 2 shallots or 1 small onion, finely chopped
  • Salt and freshly ground white pepper</

Method

Pre-heat the oven to 200°C/400°F/gas 6 and butter a roasting tray.
