Eating deep-fried cockles is delicious. They get really crispy and tasty. Just be careful not to fry too many at once otherwise you’ll almost have a popcorn situation. So it’s best to use a deep-fat fryer, or certainly a large pan with a lid.
The crispy cockles eat very well with Salsa Dressing, although it is best to make the relish looser with more olive oil and lime juice, making it into more of a dressing.
