This is as simple as it sounds – very few ingredients but plenty of taste. It is a very basic salad that can take on so many more flavours. Sliced, cooked, peeled new potatoes can be warmed in the horseradish or mustard dressing and placed underneath the salad, and a hot poached egg can be popped on the top before finishing with the broad beans. Breaking the egg yolk over the smoked eel and salad and mixing it with warm new potatoes in a horseradish and mustard dressing – delicious!
