Fennel is a vegetable that is not used enough. It has the most wonderful aniseed flavour and can be eaten raw or cooked. To eat raw fennel, slice it very thinly otherwise it will be tough. All it needs then is a good marinade or dressing in which it should be served chilled. Eating a good, cold fennel salad with dressing is so refreshing and works all your taste buds. This can be eaten as a side dish to go with fish, or on its own.
