    Mushrooms and black pudding are a traditional British combination, usually served at breakfast. They work together very well in this recipe, contrasting the creaminess of the risotto with the crispy, rich black pudding. The best mushrooms to use in this recipe are the open cup or flat. These have an almost meaty texture and a much better flavour.
