Core and halve the peppers lengthways, remove the seeds and cut into 1 cm (½ in) slices lengthways. Slice the courgettes at an angle to give oval slices. Fry the onion and peppers in a heavy-based pan in a little olive oil and butter until softened. Add the courgettes and cook for 1 minute then remove from the heat. Cook the mushrooms separately in a very hot pan in a little olive oil, then add
