Fresh peas are lovely to eat, providing they are properly cooked. Remember, don’t try to cook too many at once, and don’t cover the pan.

Once the peas have been shelled, bring a large pan of salted water to the boil. Drop in the peas, return the water to the boil and boil for 15—20 minutes, keeping the water boiling all the time.
