These puddings are real homely classics – just the sort of pudding to finish your meal, especially for a Sunday lunch. Steamed sponges seem to be playing a big part in The Great British Revival. In fact, steamed lemon sponge was one of the, if not the, first pudding that I made. The sponge can be so light and fluffy to eat and will take on so many other flavours, many of which I am featuring here.
To make it a lot easier to turn out the puddings, use plastic moulds which hold up ver
