This pudding gives us three different orange flavours from bitter to sweet, and also three different textures. It has to be my favourite steamed sponge. The whole dish is packed with orange flavour.
To make the sponge, cream the butter and sugar together. Mix the eggs and egg yolk together and beat into the butter and sugar mix. Add the orange zest and fold in the flour. Add the orange juice, making sure it is cold.
Line six
