These are quick and easy to make. All you need is a sweet Fruit Purée and some crème fraîche. Crème fraîche is fresh cream that has been treated with a special culture which almost sours the cream and gives it a longer life. It works really well in ice-creams, giving a full flavour. Soft summer fruits, such as strawberries or raspberries, work beautifully in this recipe, but there is no need to wait until the soft fruit season to make them. The easy alternative is simply to take a tin of almost any fruit – peaches, pears, blackberries or whatever – and purée them in their own syrup. Add some icing sugar to increase the sweetness, then add 2—5 heaped tablespoons of crème fraîche. Now you have a quick and easy ice-cream, just churn it in the machine and it’s ready.
