This tomato dressing can also be a thick fresh tomato sauce. When tomatoes are cooking, they create a lot of excess water. This sauce is cooked until almost all the water has evaporated, leaving you with almost a fresh tomato purée. To make the sauce into a dressing, loosen with Basic Vinaigrette or olive oil to taste.
