Pesto sauce can be bought in most supermarkets and food stores, but here is a simple version to make yourself No Parmesan will be needed for this sauce.
Simply colour the nuts lightly in the olive oil, then allow to cool. Add the crushed garlic clove, basil, a pinch of salt and pepper and blend to a purée. This is now ready and can be kept for 2–3 days in the fridge.
