The obvious main ingredient here is, of course, the cranberries. Cranberry sauce can be made with just cranberries, sugar and a little water, but I replace the water with orange juice, and spice it with a little port; a combination that has become a classic. I also like to add a little chopped shallot to help the savoury taste of the dish.

This sauce eats very well with roast turkey, pork or game and with any of the bubble and squeak variations. It’s also good to serve with cold mea
