Home-made mayonnaise is so much tastier than bought mayonnaise. Use it with potatoes in a salad, or as a dressing for sandwiches.

Ingredients

  • 3 egg yolks
  • 1 tablespoon malt, white wine or balsamic vinegar
  • A pinch

Method

Whisk the egg yolks, vinegar, mustard and seasonings together, then slowly add the olive oil, whisking continuously. When all the oil has been added, finish with the hot water and correct the seasoning. A few drops of lemon juice can be added to enhance the taste.
