The Hôtel du Commerce in Saint-Constant, a village 10 kilometres from Mourjou, was for a long time a small country hotel-restaurant that enjoyed a solid reputation for traditional food. A Havas guide to the Auvergne (1948) mentions as one of its specialities faude, another word for falette. When I moved to the Châtaigneraie twenty years ago, it continued to offer good basic Auvergnat cuisine at very Auvergnat prices (i.e. low).
