The terrain of the Auvergne, much of which consists of grass-covered hills and mountains, is highly suited to the lifestyle of the hare. It is also reputed to produce animals with a particularly fine flavour. The wild hare population has been maintained at a reasonable level, particularly in the last twenty years or so, during which the once plethoric rabbit population has been severely hit by myxomatosis. But every now and then each commune’s hunting committee tops up hare numbers with a f
