My first encounter with pompe à l’huile, a pastry almost as basic as fogassons and sometimes known as ‘poor man’s cake’, was in the hidden village of Conques (Aveyron). I was wandering through the streets near its splendid Romanesque church when a little label bearing the words pompe à l’huile (literally ‘oil pump’), stuck in what looked rather like a pizza without any filling, caught my eye in a pàtisserie window. I bought a sm
