Walnuts are greatly appreciated in the Auvergne and are found all over those parts of the region where there is not too great a risk of late frosts. And if the flowering heads do get zapped — it is not unknown for the temperature to plummet to as low as —7—8°C in late April or early May even at moderate altitudes — walnut-tree owners can always fall back on the leaves, which can be used to flavour an aromatic apéritif, vin de feuilles de noyer.
