Fried spiced legume snacks are beloved in India. Unlike potatoes, they can be dried in the heat of the sun and become long-life stalwarts. They are roasted and spiced and sold on every street corner. They are the home-from-school snack of a million Indian school children.


  • 1 kg/2 lb 3 oz bag frozen broad beans/fava beans

  1. Place the broad beans in a large bowl and cover with boiling water. After 8 minutes remove from the water and peel the beans by pressing the outer skin so the beans split into two.
  2. Dry the peeled beans on paper towels.
