These little Nepalese dumplings are all the rage in India. We are not a food culture that has much embraced the steamed dumpling, perhaps thanks to the texture. Our finger food tends to be crisp and fried, but enlightenment comes in the most surprising forms. This is now a common street snack across India. About time too.

Ingredients

  • 500 g/1 lb 2 oz/3⅓ cups plain</

Method

  1. Put all the filling ingredients into a food processor, then blend to a medium paste. Chill for 30 minutes or so.
  2. Meanwhile, put the flour and a pinch of salt in a bowl and add 6–9 tablespoons water gradually, mixing to form a stiff but pliable dough. Rest the dough for about 15–20 minutes, covered.
