This dish was borne out of my fury when I paid through the nose for a teaspoon of popcorn chicken at a drive thru. My girls love popcorn chicken but I felt light in the pocket and light in the stomach. I went home and began to experiment with God’s own batter – gram flour. These are a gluten-free, delicious bite.
