Having crispy, sweet, sticky, meat-smothered finger food is important to me for the sake of my soul and my hips. I could not have a restaurant that was not able to be all things to all people, and all people need to get their hands dirty with something that sits in the intersection between dessert and dinner. I wanted a rich, fruity, dark treacle finish for these wings. Date syrup does the fruity and black treacle/molasses brings the rich darkness.
